Vegan Chocolate Matcha Latté Cookies
These beauties are deliciously complex with earthy tones, a semi-sweet chocolatey indulgence, and creamy, swirly "froth" frosting. Matcha made in heaven!
No kids in my house, so this holiday I'm baking with matcha! hehe!
Matcha's plant-powered natural color just happens to be very festive this time of year, but adding some holiday sprinkles is just too fun to pass up, right?!
One of my favorite combos right here! There's something about the earthy/floral complexity of the matcha that strikes your palette first, and then the burst of velvety, rich chocolate that shines through. Perfection.
With the bustle of the holidays, you don't need to plan or take too much time with these beauties because they come together super fast thanks to my Chocolypse All-in-One Cookie Mixes!

INGREDIENTS
Servings: 10-12 Cookies
1- Chocolypse! Salted Choco-Cyclone Cookie Mix
1 1/2 TABLESPOONS- Matcha Powder (the more high-quality the brighter the cookies will be)
1- Simple Mills Vanilla Frosting (V)
3 TABLESPOONS- Hot Water
Optional- Holiday Sprinkles
INSTRUCTIONS
- Pre-heat oven to 350° F. Take out the two pouches from the Chocolypse! cookie mix packaging (save the Sea Salt "Sprinkles" for another delicious use) and find the one labeled #1 (Almond butter mix). If contents feel hard, run under hot water for about a minute or until contents feel smooth.
- Empty this pouch into a mixing bowl. You will need to get as much as possible out, so a flexible spatula will work well here. Don't worry, the extra work will be worth it in the end!
- Add 3 tablespoons of hot water, 1 tablespoon of matcha powder, and whisk until slightly thickened. About 30 seconds.
- Stir in Pouch #2 (flour mix) with a flexible spatula or mixing spoon until there are no white flour streaks visible. I know it's fun, but try not to over mix! :)
- Roll dough into 10-12 balls and place on greased baking sheet 1 inch apart. Flatten slightly and place on the oven's center rack.
- Bake for 12-14 minutes or until edges have slightly hardened, but center is soft. For crispier cookies bake for 14-15 minutes.
- While cookies are baking, place about a cup of the frosting into a small mixing bowl. Gradually add matcha powder, 1/4 teaspoon at a time until you get desired color and/or flavor.
- Once cookies are cooled completely, frost and add holiday sprinkles! You can also dust a little more matcha powder on top if you don't have sprinkles for some extra flair. Cookies will store nicely in a sealed container for the next 3-4 days. (If they last that long!)
