Vegan Junk-food Chocolate Chip Cookies
These chocolate chip cookies hit all the right notes! Salty, sweet, rich and crunchy.... so friggin delicious. Junk food lovers rejoice!
I'm not too much of a junk-food vegan, but when the craving kicks in and it's National Chocolate Chip Cookie Day, why not get a little crazy, right?!
I love topping these babies with corn snack from Love, Corn brand. They taste like popcorn! Actual popcorn either burns or turns stale in the oven, FYI. I tried it. Don't do it. Baking tips!
Ingredients
Makes 12 Cookies
Cookie Base
1- Chocolypse! Choco Chunker Cookie Kit (V)
3 TABLESPOONS- Filtered Hot Water
Mix-ins
1/2 CUP- Oreos (about 6-7) *if you're avoiding artificial flavoring and palm oil like I am, the Whole Foods 365 brand cookies are a great alternative.
1/2 CUP- Pretzels
1 HANDFUL- Love, Corn Brand Corn Snacks as topping
Instructions
- Pre-heat oven to 350° F. Take out the two pouches from the Chocolypse! cookie mix packaging and find the one labeled Almond Butter Mix. Spoon out contents of pouch into a medium size mixing bowl.
- Add 3 tablespoons of hot water and whisk until slightly thickened. About 30 seconds.
- Stir in Flour Mix with a flexible spatula or mixing spoon until it's half fully mixed.
- Crush the Oreos and pretzels and mix in the dough until no white flour streaks are visible.
- Divide dough into 10-12 balls, place on a non-stick baking sheet, and push each down slightly.
- Top with the corn snacks and bake for 11-13 minutes. Cookies are done when the edges are slightly hard, but center is still soft.
- Cool for 10 minutes before digging in. The cookies continue to bake on the sheet, so it's definitely worth the wait!
